A little retro today but this is one of the first things that my mom taught me to cook.  We call it Company Casserole as she would make this a lot to take to church covered dish suppers or if we were having a number of guest over to the house.  It is a quick and easy recipe, you can also put this together the night before to save you time, and any extra may be packaged in to single servings, frozen and used later.  Here is the recipe, in mom’s handwriting, but I will tell you later some of my changes and things I do to make it a bit healthier.

4 double chicken breasts, skinned and deboned

4 1/2 oz thinly sliced smoked dried beef

2 cans of mushroom soup

16 oz Sour Cream

4 strips of bacon
