Back down memory lane again as my mom found Dear Abby’s Black-Eyed Pea Salad recipe many years ago and we would have this on a pretty regular basis, especially in the summer.  Now, I know everyone has their year supply of black-eyed peas on New Years (wink) as is the tradition but this recipe does make a great side dish or salad snack during the summer.  The rice vinegar gives it a perfect kick without as much of the pucker of regular vinegar, not that I am against a good pucker I just like them more with pickles.  In addition, I not only find this to be an adaptable recipe for your liking but very easy as well.  In fact, I lost this recipe in some move over the years and had to improvise with what I could remember but I was so excited to see the original recipe come…
